L'Etivaz AOP: the "Alpage" Swiss cheese present in the Salon de Gourmets 2018

L'Etivaz AOP, a cheese with a pronounced fruity flavor and a light touch of walnut, comes down from the high Swiss mountains to the Spanish capital at 32 Salón de Gourmets. As every year, Cheeses from Switzerland will install its authentic Swiss chalet at the fair from 7th to 10th of May.

L'Etivaz AOP is a handmade cheese by using raw milk. This cheese, breaks the rules of the industrialized world in which we live to give life to a food produced from a traditional recipe, which is based on heating large cauldrons of milk over fire fed with wood from the forest.

It is distinguished for being an "Alpage" cheese, which implies that its production begins with the arrival of good weather, between May and October, when the cows go up to the high mountain meadows to feed themselves. Therefore, it is very sought after and appreciated by cheese lovers. Its production is 400 tons per year, which is produced in just over 100 alpine dairies in the canton of Vaud. Like the rest of Swiss cheeses, l'Etivaz AOP is a healthy and natural food, suitable for gluten and lactose intolerant.

To ensure that its cheese varieties can be enjoyed, Cheeses from Switzerland will offer an uninterrupted tasting during the Salon de Gourmets, so that visitors can discover the qualities and characteristics of its main and unmistakable varieties: Appenzeller®, Le Gruyère AOP, Tête de Moine AOP, L'Etivaz AOP, Sbrinz AOP, Emmentaler AOP and Vacherin Fribourgeois AOP. The chalet de Quesos de Suiza will be located in Hall 4 of the Feria de Madrid (Ifema), number 4G14, where a 4 day conference will take place full of Swiss cheese.
