It is the original and famous big cheese with holes of Switzerland, elaborated in the valley of Emme. The wheels of Emmentaler AOP weigh about 100 kilos and to produce one you need more than 1,000 liters of raw milk. The origin of its large size goes back centuries, when the Swiss cheese makers chose to elaborate a single wheel a day instead of several to save on the payment of customs. The smooth nutty taste of Emmentaler AOP can be tasted after a maturation process of between 4 and 12 months.
