Artisan Cheese Cured made with unpasteurized goat´s milk

Mature Monfragüe represents absolute dedication to a job well done.

Pressed paste cheese, made with unpasteurized goat's milk and a minimum ripening period of three months. Its shape is cylindrical, weighingin between 1 and 5 kg. It has an edible greenish-grey crust, due to natural mold, and is white on the inside, with little holes evenly distributed within. Firm texture, but at the same time creamy and smooth on the palate. It has the traditional taste of the goat’s milk, of medium intensity, and is slightly lactic, with a deep aroma of goat and natural cave.

Quesería Monfrag 3R is a family business in the heart of the Monfragüe National Park (Extremadura). Every day we make artisanal cheese from raw milk only from our own goats. Goats that we pamper and take care of. Our free-range livestock is fed with natural products and raised ourdoors in our own sustainable farm.The cheeses are made one by one throughan artisanal process, and ripenedin our cellar made from natural materials.All crusts are edible which contributes to each cheese having its own personality.
