Sobriety and elegance. Strength and full-bodied character. Our highly calcareous soils and the microclimate of the Serral del Vell hillock give each vintage an unmistakable character. Bursting with strength, harmonious and complete. Crystallised fruits merge with notes of the ripest citrus fruit.Recaredo Brut de Brut is a completely dry brut nature cava with no added sugar. We recommend serving Brut de Brut at around 10°C and opening the bottle a few minutes before serving.

- Single-estate character. Grapes harvested from Recaredo’s Serral del Vell estate in the Bitlles Valley Highlands. Serral del Vell hillock is a mainly calcareous terrain characterised by disjointed landscapes in the county of the Alt Penedès, Barcelona.

-Organic agriculture. No chemical herbicides or insecticides are used. Only natural organic fertiliser.

-In-house vinification. Vinification, winemaking and ageing are carried out entirely in Recaredo.

-Long-aged wines. Secondary fermentation and bottle ageing are done exclusively with natural cork stoppers. Cork is sustainable, recyclable and ideal for retaining the original character of a long-aged cava.

-Manual disgorging without freezing. Disgorging (the uncorking process) is done by hand without freezing the neck of the bottle, a technique based on skilled craftsmanship and respect for the environment.

-Vintage 2007. The vintage is vibrant and balanced, marked by meteorological contrasts, with high temperatures and little rain in the autumn and winter months. Rains were erratic in the spring, and in May a record rainfall was recorded in the vineyards (155.7 l/m2). Mildew came on hard but the biodynamic treatments we applied proved highly effective. In the end, the grapes harvested were of high quality and in exceptionally good health.

FIRST ESTATE CAVA EVER

The 1999 vintage of Turó d’en Mota, which would see the light in the autumn of 2008, marks a new chapter in Recaredo’s history. Turó d’en Mota is the first cava made using a single variety of grapes (100% Xarel·lo) harvested from a single vineyard. It is also the longest-aged cava, having spent over a hundred months in contact with the lees. Turó d’en Mota is a terroir wine in the broadest sense of the term: the expression of a land characterised by highly calcareous soil and a Mediterranean microclimate, with the Xarel·lo grape variety as the undisputed protagonist, and an approach to viticulture that stresses observation over intervention.  

A DECADE IN BIODYNAMIC VITICULTURE There can be no wines that capture the essence of the landscape unless we care for and respect the land itself. This is the thinking that led Recaredo to start practising biodynamic agriculture – to set life in motion. We started working in biodynamics in 2006, making some proofs with some of our vineyards. Two years later and after valuing such favourable results, we decide to cultivate all our vineyards according the biodynamic principles. Recaredo was the first producers of protected designation of origin cava and protected designation in the Penedès region to practise biodynamic agriculture with official certification by Demeter.
